Barbecue ribs on a charcoal grill

Spring has sprung, the air is fresh and the weather is warming up, so now it’s time to pull out the grills, fire pits, and smokers simply because it’s barbeque season!

This is the time of the year that I love to sit outside with the radio on (with 91.9 WCAL on if possible), listen to my pets running around the yard with my siblings, and just enjoy the sound and smells of dinner cooking over an open flame. This also comes with having some patience because this takes some time.

Since I’m doing individual cuts for ribs take about an hour to an hour and a half to cook vs a full rack of ribs where they take up to 2-3 hours. Feeds 2-6 people

Ingredients

· Ribs (full rack or individually cut)

· Potatoes

· 1 Onion

· 1 Bag of mini carrots or 3 normal size Carrots

· 1 Stick of Butter

· Paperika

· All Season Salt

· Garlic Powder

· Onion Powder

· Chilli Powder

· Crushed Red Pepper

· Black Pepper

· Brown Sugar

· BBQ Seasoning

· Minced Garlic Preparations

Preparation  Instructions

· Clean off a decent sized work area on the counter. · Wash off all meats and veggies that you will cook with · Lay out a sheet of aluminum foil · Take a small hand full of the brown sugar and lay down on the foil place · Take a butter knife and the stick of butter and cut 3 small pieces and them across the top the brown sugar spread out almost evenly · Take the ribs and place them on top of the brown sugar and butter. · Take the seasonings above ( Season Salt, Chilli Powder, Onion Powder, BBQ Seasoning, Garlic Powder, Black Pepper, Crushed Red Pepper, and Minced Garlic) and cover the ribs with a light coating. · Take the Brown sugar and Paprika and cover the top of the seasonings · Then rub all seasonings so that the entire rib or rack is covered with an even coating · Cut off another 3 slices from the butter and place over the ribs · Take another piece of foil and cover the ribs and wrap the 2 pieces of foil together and place ribs in fridge for 15-20 mins to rest

Grilling Instructions

· Place ribs on grill inside foil for 25-30 mins if full rack 30-50 mins 3 / 3 · Remove ribs from foil and place them on open flames of the grill racks and cook till there is no pink inside the ribs · Slice up potatoes, carrots, and onions on clean cutting board · Mix together on a piece of foil · Add ½ stick of butter · 1 teaspoon of salt · 1 ½ tablespoons of black pepper · 3 teaspoons of garlic powder · 1/8 teaspoon minced garlic · Let rest in the fridge for 5 min then mix again · Extra foil could be needed to wrap the veggies up if needed. Depending on serving size · Cook for 1 ½ hours to 2 hours or once thee veggies have become soft and chewy ADDITONAL · Add BBQ Sauce or hot sauce to the ribs if you want · Use a grilling brush to cover the ribs with the sauce and cover evenly
